Wok with scampi

This wok is incredibly good, and easy to make.
You can use chicken instead of scampi in this wok.

2 carrots
1/2 squash
1 bell pepper
3 spring onions
Fry for a few minutes before adding a can of coconut milk.
Season with salt, pepper, a little cayenne pepper and about 1 tablespoon of curry powder.
Add ready-cooked scampi towards the end, and sprinkle with fresh coriander.

Served with rice.
