2 chicken fillets 1 can canned tomatoes 3 dl chicken stock or broth 2 celery stalks 1 onion 2 cloves garlic 1 paprika 1/3 teaspoon salt 1 tablespoon paprika 1/2 teaspoon chili spices 1 teaspoon cumin 2 tablespoons oil for frying Fresh coriander Corn tortilla chips if desired Cut diced chicken fillets. Dice the onion, celery and paprika, and finely chop the garlic. Heat 1 tablespoon of oil and fry the chicken until it is cooked through. Transfer the chicken to a plate. Use the same pan and fry the onion and garlic on a medium heat for a few seconds. Add paprika, celery, paprika powder, chilli spices, cumin and salt. Fry for about 30 seconds. Then add tinned tomatoes and stock. Cook for about 10 minutes before adding the chicken. Served with fresh coriander, corn and some tortilla chips!
