This lovely dish can be enjoyed either as a starter or just as a small dish to enjoy.

Cut off the top of the tomato. Put it to the side and scrape out the insides of the tomato.
Beat an egg and add salt and pepper, possibly other spices of your choice.
Fill the egg mixture into the tomato and sprinkle over some grated cheese.
Finally, secure the top of the tomato with a toothpick.

Roast in the oven at 225 degrees until the skin on the tomato begins to "loose".

Enjoy alone or with a small salad on the side 🙂
