3 eggs 3 tablespoons water 100 g spinach 1 clove garlic 20 g feta cheese Salt/pepper Whisk together eggs, water, a pinch of salt and a little pepper. Finely chop the garlic. Heat a frying pan with a little oil. Add spinach and garlic. Fry the spinach quickly while stirring until the spinach collapses. Season lightly with salt and pepper and add the spinach to the side. Pour the egg mixture into the pan. Scrape the egg mixture from the edges towards the center while turning the pan slightly so that the uncooked egg mixture constantly runs out towards the edge. Sprinkle over the feta cheese when the omelette is about to set. Add the spinach and turn the omelet onto a plate. Top with sprouts and possibly chili sauce.
