This Indian dish is a real flavor bomb that absolutely deserves to be included in my favorite dinners on this page.

Ingredients:

600 g chicken fillet
1 onion
2 cloves of garlic
1 tablespoon chopped ginger (can be omitted)
2 tbsp garam masala spice
1 teaspoon chili powder (can be omitted)
1 can canned tomatoes
1 dl coconut milk
2 dl yogurt (coconut or soy)
Coriander
Salt

Rice as a side dish

Cook rice as directed on the package.

Cut the chicken into pieces. Fry in oil.
Add the chicken to the side.

Sauté the onion in oil for a minute before adding the garlic, chopped ginger, garam masala and chilli powder. Mix everything well before adding the tomatoes and coconut milk. Let the mixture simmer for 10 minutes.

Add the fried chicken and yogurt, simmer for about 10 minutes.

Sprinkle chopped fresh coriander and serve the dish with boiled rice.

If you want to make a little more out of the dish, it can be served with raita, mango chutney, naan bread and papadums.
